Aguascalientes Tequila Añejo is a 40% abv spirit from Jalisco. It uses 100% Tequilana agave grown in Los Valles. NOM 1137 marks this production by Aguascalientes. Stone and brick ovens cook the hearts before milling. Stainless steel tanks handle fermentation for ten days. Distillation occurs twice in a stainless pot still. Aroma reveals cooked agave and brick smokeyness. Sweet notes appear on the lips and tongue. Heat remains low with a smooth finish. Pepper is minimal in this balanced expression.
