Alebrijes Blanco is a Jalisco tequila from NOM 1502. This Los Valles spirit uses Tequilana agave and autoclave cooking. The aroma offers light sweet cooked agave with stone fruit sweetness. Minerality and white floral notes appear early in the glass. The palate confirms these impressions with a sweet and sour balance. Air exposure introduces bitterness while the finish remains medium to long. Light cooked agave and mineral characteristics persist consistently until the end. Serve promptly because aromas dissipate after twenty minutes in the glass. The profile stays consistent despite prolonged exposure to air introducing bitterness.
