Ayate Añejo is a tequila aged twelve months in new American oak, four months in used French oak, and finished in Chardonnay barrels. The spirit presents aromas of caramel, butterscotch, dried fruit, and toasted oak with a hint of baking spice. Palate notes include sweet vanilla, orange zest, and heavy spice such as peppermint and cinnamon. The finish is generally short with a slight sting or burn, balancing the strong wood influence against agave sweetness. Natural spring water sourced on property supports this winemaking-inspired production method.
