Elevación1250 Tequila Blanco is a Jalisco spirit from Los Valles, produced under NOM 1522. This 40% abv blanco uses Tequilana agave cooked in an autoclave and milled by roller mill. Open-air spontaneous fermentation occurs in stainless steel tanks without fibers before double distillation in pot stills. Deep well water supports the process, yielding notes of cooked agave, pear, and citrus. The palate balances sweet acidity with mineral undertones and a finish of black pepper. It offers a simple structure suitable for sipping or cocktails, providing refreshing character with subtle earthy tones.
