Maguey Melate Criollo, Carmello Pedroza Alvarez is a Destilado de Agave Joven from El Platanar Malinalco. Producer Carmello Pedroza Alvarez uses Angustifolia, Rhodacantha, and Tequilana agaves harvested at seven years. Hand-milled crops undergo double distillation in copper stills to yield this 42.5 percent spirit. Aromas of raw sugarcane, leather, and vanilla extract emerge alongside chocolate malt and rock salt. Orange peel, smoked meat, and flowers define the nose with medium sweetness on the palate. The finish reveals smoky elements, burnt plastic, and clay notes in this distinct regional expression.
