Producer Ageo Cortés uses tahona milling and a refrescador for distillation. The profile features sweet frosted cake notes alongside peppery minerality from the bicuixe. Woody bitterness and savory spices like cinnamon balance the sugary rock candy sweetness on the palate. Lactic funk emerges on a finish that lingers with dry acidity and distinct spice character, creating a layered sensory profile.
