Ana Maria Romero Mena cooks the agave in an autoclave before fermenting it in stainless steel tanks and distilling it twice. The spirit presents grassy, earthy notes with cooked agave and black pepper on the palate. Citrus oils and mineral undertones appear alongside vegetal bitterness and mint throughout the profile. The finish is short yet lingers with spicy, sweet, and saline elements that balance the diverse terroirs.
