This limited edition spirit rests for two years in stainless steel before bottling at over 50 percent alcohol by volume. The profile opens with cooked agave, earthy minerals, and fresh vegetal notes like green apple and mint. Palate impressions include savory sweet potato, brine, and distinct herbal hints of rosemary and sage. A bold jalapeño kick leads to a lingering finish defined by white pepper, anise, and citrus zest.
