Alipus San Luis XX Aniversario is a mezcal ensemble from Oaxaca. This batch blends Angustifolia and Marmorata agaves under NOM-O14X. Producer Baltazar Cruz Gomez milled the hearts in a tahona stone before distilling them in copper. 4 percent ABV. Early notes of French crêpes and maple syrup shift to raisin toast and plum pudding. Ripe cantaloupe and vanilla ice cream emerge on the nose later. A lactic flavor deepens brown sugar, Portuguese egg custard, and green banana on the palate. The finish stays spicy and floral with black pepper and damp moss.

Aromatic profile with a combination of citrus, fruity, herbal and sweet notes. Aromas of pineapple, tangerine and grapefruit stand out, accompanied by apple yellow, mint and cinnamon, along with a sweet caramel note. The intensity aromatic is average, as is the alcoholic sensation.

Citrus and spicy taste profile, with defined flavors of mandarin, grapefruit and cinnamon, which provide a fresh and vibrant acidity. Sweet notes of pineapple are perceived and a sweetness reminiscent of caramel. Acidic flavors predominate, accompanied by a subtle sweetness. The alcoholic sensation is medium-low. The aftertaste shows an average persistence, dominated by citrus notes and fruity. Notes of pineapple, orange and lime are perceived. The alcoholic sensation and astringency is low, allowing the final notes to be expressed clearly and softness.

Alipus Mezcal

About the Brand

Alipús was born in 1999, as a project of the Destilería Los Danzantes, with Don Joel Antonio and sons as the first producers, in San Juan del Río. Subsequently, Don Eduardo Hernández, of Santa Ana del Río, making Alipús Santa Ana mezcal; Don Cosme Hernandez and his son Cirilo in San Baltazar Guelavila, who make the Alipús San Baltazar mezcal; Don Valente Angel and sons, of Santa María La Pila, with the Alipús San Andrés mezcal. In 2013, Alipús San Luis was incorporated, made by Don Baltazar Cruz and sons, of San Luis del Río, and Alipús San Miguel, made by Don Felix García, Leonardo Rojas, and Tío Jesús in the Potrero Sola de Vega.
