Capaz Añejo is a tequila aged in oak. Produced by the Capaz brand under NOM 1534, this spirit originates from Jalisco. The distillery uses Agave tequilana Weber variedad azul grown in Ciénega. Acid-thermal hydrolysis cooks the agave before milling with a diffuser. Fermentation occurs in stainless steel tanks without fibers for ten days. Two distillations in stainless steel pot stills refine the spirit to 40% abv. Deep well water supports this precise production method throughout the entire process. This careful approach ensures a consistent and high-quality final product for consumers seeking authentic aged tequila from this specific region.
