Chimeco Jabali de Jabali (Pechuga) is a Destilado de Agave in the Joven category. Edgar Gonzalez mills Convallis agave from San Cristobal Lachirioag, Oaxaca in a tahona. He then distills the mash in copper stills to create this 49% ABV spirit. The liquid remains unaged and clear, avoiding any wood contact after distillation finishes. This pechuga expression carries the distinct character of traditional Oaxacan production methods today. The result is a bold spirit that reflects the specific terroir of its origin clearly. Producers outside protected zones often use this classification for their unaged agave spirits now.
