Chimeco Jabali, Edgar Gonzalez is a Joven Destilado de Agave from San Cristobal Lachirioag, Oaxaca. Edgar Gonzalez mills Convallis agave in a tahona and distills it in copper. The spirit sits at 49 percent alcohol by volume. Anise and fresh mint lead the nose with herbal garden notes reminiscent of fernet branca. Palate complexity unfolds with peppery sensations and minty herbal cough drop flavors. Sweet roasted undertones emerge alongside candied pepper characteristics on the long finish. Floral accents blend with oregano, bay leaves, and cilantro.
