Convite Espadin-Madrecuishe

Oaxaca

Convite Espadin-Madrecuishe is a mezcal ensamble from San Baltazar Guélavila, Oaxaca. Produced by Cosme "Tucho" Hernandez and Daniel Hernandez under NOM-O231X, this spirit uses Angustifolia and Karwinskii agaves. Milling occurs in a tahona while distillation happens in copper stills. The profile balances briny minerality with fresh sweet agave and toasted wood smoke. An oily yet soft texture marks herbal freshness and distinct bitter notes. A long minty finish provides a pleasant mild peat aftertaste that remains balanced and distinct for the palate.
