Produced under NOM 1146, this expression uses Tequilana agave cooked in an autoclave and milled via screw and roller mills. Open-air fermentation with proprietary yeast occurs in stainless steel tanks before double distillation in copper pot stills. The nose reveals floral notes, cinnamon, olive, and a distinct funk alongside bright citrus and pepper. Slick viscosity carries flavors of vanilla, black pepper, and lactic cheese on the palate.
