Don Mateo Pechuga, Delia Vargas Vieyra is a Lot 41 pechuga mezcal from San Miguel, Michoacán. Produced by Delia Vargas Vieyra and Emilio Vieyra under NOM-M218C, it uses Cupreata and Durangensis agave. This Filipino distilled spirit features turkey and venison alongside tropical fruit notes like lychee, papaya, pineapple, and cherries. A subtle meat component and faint bacon fat nuance balance the sweetness without overwhelming the agave character. The palate offers medium viscosity with hints of scallion and a dessert-like quality reminiscent of tres leches.

Color: Crystalline, very bright, with slight cold flashes could be perceived such as silver, very faint bluish or cold light gray under certain lighting conditions. Clarity: Clean and transparent, without impurities or turbidity.
Olfactory Phase
Aromatic profile with a combination of citrus, fruity, herbal and sweet notes. Aromas of pineapple, tangerine and grapefruit stand out, accompanied by apple yellow, mint and cinnamon, along with a sweet caramel note. The intensity aromatic is average, as is the alcoholic sensation.

Sweet notes of pineapple are perceived and a sweetness reminiscent of caramel. Acidic flavors predominate, accompanied by a subtle sweetness. The alcoholic sensation is medium-low. The aftertaste shows an average persistence, dominated by citrus notes and fruity. Notes of pineapple, orange and lime are perceived. The alcoholic sensation and astringency is low, allowing the final notes to be expressed clearly and softness.

About the Brand
Mezcal Don Mateo de la Sierra is run by maestro Emilio Vieyra. Don Mateo was Emilio’s grandfather. He migrated from Guanajuato to Michoacán in 1840, and began producing mezcal. Given that Don Emilio represents his family’s sixth generation of maestro vinatero, what better ambassador of the spirit of Michoacán. Coming from Michoacán gives their mezcals a very different character and taste from those made in Oaxaca or elsewhere in Mexico.
