Miel de Tierra Espadin is a Joven mezcal from Jalpa, Zacatecas. Teresa Rubio Murillo produces this spirit under NOM-F426D using Agave angustifolia. The mezcalero mills the agave in a tahona before distilling it in copper stills. This process yields an unaged expression bottled at 40% ABV without wood contact. The result highlights the raw character of the local agave species directly after fermentation. Each bottle captures the distinct terroir of Zacatecas through traditional methods and precise craftsmanship by the producer.

Citrus and spicy taste profile, with defined flavors of mandarin, grapefruit and cinnamon, which provide a fresh and vibrant acidity. Sweet notes of pineapple are perceived and a sweetness reminiscent of caramel. Acidic flavors predominate, accompanied by a subtle sweetness. The alcoholic sensation is medium-low. The aftertaste shows an average persistence, dominated by citrus notes and fruity. Notes of pineapple, orange and lime are perceived. The alcoholic sensation and astringency is low, allowing the final notes to be expressed clearly and softness.

About the Brand

Miel de Tierra means Earth’s Honey, and the name comes from the sweet, amber-flushed tree sap, which can only be found in virgin barrels made of fresh natural oak timber. Given the name, Miel de Tierra has a robust barrel-aging program and they also have several unaged releases. Their location in southern Zacatecas makes them a fairly unique brand internationally.
