

Catedral Espadin
Catedral Espadin Joven is a mezcal from San Pablo Etla Villa, Oaxaca. Producer Jorge Octavio Cardaz Cualtamirano uses Angustifolia agave aged five to seven years. This 46% ABV spirit features tahona milling and copper distillation under NOM-O70X. The aroma opens with tangerine citrus, cantaloupe, and cold limestone notes. An oily mouthfeel supports flavors of lemon zest and spicy jalapeno. Mild fennel and white chocolate balance the profile on the palate. The finish combines cooling limestone chalk with earthy mushroom resonance. This lot 30 expression offers a distinct character typical of its agave species.

Color: Crystalline, very bright, with slight cold flashes could be perceived such as silver, very faint bluish or cold light gray under certain lighting conditions. Clarity: Clean and transparent, without impurities or turbidity.
Olfactory Phase
Aromatic profile with a combination of citrus, fruity, herbal and sweet notes. Aromas of pineapple, tangerine and grapefruit stand out, accompanied by apple yellow, mint and cinnamon, along with a sweet caramel note. The intensity aromatic is average, as is the alcoholic sensation.

The aftertaste shows an average persistence, dominated by citrus notes and fruity. Notes of pineapple, orange and lime are perceived. About the Brand
Catedral Mezcal has pledged a portion of the stock in the US brand to a nonprofit in Mexico entitled “Catedral de mi Padre Community Support Organization.” The mandate of the fund is for the betterment of the families making Catedral Mezcal in Oaxaca. The process has been structured so that the maestro mezcaleros receive equity based on their individual contributions of mezcal to the brand.
