

Catedral Tobala
Catedral Tobala is a Joven mezcal from Oaxaca. Rene Parada Barriga produces this spirit in Santiago Matatlán using Potatorum agave aged six to ten years. He mills the hearts in a tahona and distills them in copper stills under NOM-O70X. The result is an unaged spirit bottled at 46% ABV without wood contact. This clear expression captures the raw character of the specific agave species while maintaining structural integrity through traditional methods. The producer ensures each bottle reflects the unique terroir of the region and the distinct profile of the Potatorum variety.

Color: Crystalline, very bright, with slight cold flashes could be perceived such as silver, very faint bluish or cold light gray under certain lighting conditions. Clarity: Clean and transparent, without impurities or turbidity.
Olfactory Phase
Aromatic profile with a combination of citrus, fruity, herbal and sweet notes. Aromas of pineapple, tangerine and grapefruit stand out, accompanied by apple yellow, mint and cinnamon, along with a sweet caramel note. The intensity aromatic is average, as is the alcoholic sensation.

About the Brand
Catedral Mezcal has pledged a portion of the stock in the US brand to a nonprofit in Mexico entitled “Catedral de mi Padre Community Support Organization.” The mandate of the fund is for the betterment of the families making Catedral Mezcal in Oaxaca. The process has been structured so that the maestro mezcaleros receive equity based on their individual contributions of mezcal to the brand.
