De Matachines Peñasco is a Joven destilado de agave from San Luis Potosí. Martin Hernandez produces this batch using brick oven cooked salmiana agave, tahona milling, pine wood fermentation, and a clay pot distillation. The profile presents earthy, funky notes of salt and vinegar with stewed vegetables and leeks. It carries dusty, leathery undertones alongside black licorice and wet decomposing leaves. The palate offers a spicy tingle heat in the back of the throat. This expression stands apart from typical regional styles, delivering a complex and punchy character that lingers with sweet mouth drop scents.

Aromatic profile with a combination of citrus, fruity, herbal and sweet notes. Aromas of pineapple, tangerine and grapefruit stand out, accompanied by apple yellow, mint and cinnamon, along with a sweet caramel note. The intensity aromatic is average, as is the alcoholic sensation.

About the Brand
Matachines are ceremonial religious dancers throughout Central/South America and through Mexico who have been performing since the 17th century. Some of these traditional dance troupes have existed for hundreds of years and continue their traditions today. The De Matachines brand works with producers in San Luis Potosi, Guanajuato, and Zacatecas where some of the largest producers of agave spirits in the 19th century still produce today. Their traditions and history may be less widely known but are just as rich and deep as those found anywhere else in Mexico.
