Producers cook the hearts with acid-thermal hydrolysis before milling them in a diffuser. Fermentation occurs in stainless steel tanks for ten days. Distillers then run the liquid through a still twice. The result is an unaged spirit with clear agave notes. This process highlights the raw character of the blue Weber variety without wood influence or extended resting periods that alter its natural profile.
