

Pal’alma Al Pastor
Pal’alma Al Pastor is a Pechuga Destilado de Agave from the Sierra del Tigre region. This spirit presents intense aromas of roasted tomatoes, corn, and vinegar alongside notes of adobo seasoning and grilled meats. The palate delivers a complex interplay of sweet pineapple, acetic acid, and various cooking spices including chipotle and guajillo chilis. A savory finish reveals minerality, wet terracotta, and unseasoned dried mushrooms. With high ABV levels ranging from fifty-six to fifty-nine percent, it offers a bold and unique profile distinct from standard expressions.

Color: Crystalline, very bright, with slight cold flashes could be perceived such as silver, very faint bluish or cold light gray under certain lighting conditions. Clarity: Clean and transparent, without impurities or turbidity.
Olfactory Phase
Aromatic profile with a combination of citrus, fruity, herbal and sweet notes. Aromas of pineapple, tangerine and grapefruit stand out, accompanied by apple yellow, mint and cinnamon, along with a sweet caramel note. The intensity aromatic is average, as is the alcoholic sensation.

Sweet notes of pineapple are perceived and a sweetness reminiscent of caramel. Acidic flavors predominate, accompanied by a subtle sweetness. The alcoholic sensation is medium-low. The aftertaste shows an average persistence, dominated by citrus notes and fruity. Notes of pineapple, orange and lime are perceived. The alcoholic sensation and astringency is low, allowing the final notes to be expressed clearly and softness.

Pal’alma (or Mezcalito Pal’alma) is curated by Erick Rodriguez. Erick also bottles under the brand Almamezcalera. Known by many as the Indiana Jones of Mezcal, Erick Rodriguez works with agave spirits producers from the 20+ states of Mexico. Anywhere he finds agave fields and a freshwater stream, there’s a good chance that someone is making mezcal nearby. He has a private tasting room in Mexico City, which we visited in 2017, and wrote about in our post Almamezcalera & Mezcalito Pal’alma.
