Pal’alma Oaxaca San Martinero is a joven Destilado de Agave from the karwinskii species, distilled to 58% abv. The nose presents warm molasses, roasted agave, milk chocolate, and floral aromatics alongside sweet caramel and cocoa dust. The palate reveals rich chocolate notes, salinity reminiscent of salted caramel, and vegetal qualities like butternut squash. It finishes with light mineral slate and a gentle heat that remains smooth despite the high alcohol content, offering a complex profile of stone fruits and warm spices without excessive pepper.

Aromatic profile with a combination of citrus, fruity, herbal and sweet notes. Aromas of pineapple, tangerine and grapefruit stand out, accompanied by apple yellow, mint and cinnamon, along with a sweet caramel note. The intensity aromatic is average, as is the alcoholic sensation.

Citrus and spicy taste profile, with defined flavors of mandarin, grapefruit and cinnamon, which provide a fresh and vibrant acidity. Sweet notes of pineapple are perceived and a sweetness reminiscent of caramel. Acidic flavors predominate, accompanied by a subtle sweetness. The alcoholic sensation is medium-low. The aftertaste shows an average persistence, dominated by citrus notes and fruity. Notes of pineapple, orange and lime are perceived. The alcoholic sensation and astringency is low, allowing the final notes to be expressed clearly and softness.

Pal’alma (or Mezcalito Pal’alma) is curated by Erick Rodriguez. Erick also bottles under the brand Almamezcalera. Known by many as the Indiana Jones of Mezcal, Erick Rodriguez works with agave spirits producers from the 20+ states of Mexico. Anywhere he finds agave fields and a freshwater stream, there’s a good chance that someone is making mezcal nearby. He has a private tasting room in Mexico City, which we visited in 2017, and wrote about in our post Almamezcalera & Mezcalito Pal’alma.
