Pal’alma Michoacán, Azul is a destilado de agave aged in glass. Producer María E. Pérez uses Tequilana agave from Rio de Parras, Michoacán. This spirit holds 52% ABV and features hand milling with Filipino distillation. The nose offers bubblegum, cheese, blueberries, lemon, and peaches alongside whipped cream. Palate notes include funky azul, citrus, vanilla cake frosting, and sweet accents balanced by acidity. Raspy to full richness textures feature men’s Old Spice aftershave, beaten-in leather, oats, toasted almonds, and caramel pecans. Herbal elements emerge on the finish.

Color: Crystalline, very bright, with slight cold flashes could be perceived such as silver, very faint bluish or cold light gray under certain lighting conditions. Clarity: Clean and transparent, without impurities or turbidity.
Olfactory Phase
Aromatic profile with a combination of citrus, fruity, herbal and sweet notes. Aromas of pineapple, tangerine and grapefruit stand out, accompanied by apple yellow, mint and cinnamon, along with a sweet caramel note. The intensity aromatic is average, as is the alcoholic sensation.

Citrus and spicy taste profile, with defined flavors of mandarin, grapefruit and cinnamon, which provide a fresh and vibrant acidity. Sweet notes of pineapple are perceived and a sweetness reminiscent of caramel. Acidic flavors predominate, accompanied by a subtle sweetness. The alcoholic sensation is medium-low. The aftertaste shows an average persistence, dominated by citrus notes and fruity. Notes of pineapple, orange and lime are perceived. The alcoholic sensation and astringency is low, allowing the final notes to be expressed clearly and softness.

About the Brand
Pal’alma (or Mezcalito Pal’alma) is curated by Erick Rodriguez. Erick also bottles under the brand Almamezcalera. Known by many as the Indiana Jones of Mezcal, Erick Rodriguez works with agave spirits producers from the 20+ states of Mexico. Anywhere he finds agave fields and a freshwater stream, there’s a good chance that someone is making mezcal nearby. He has a private tasting room in Mexico City, which we visited in 2017, and wrote about in our post Almamezcalera & Mezcalito Pal’alma.
